Typically, as `doc[s]` folder contains documents aimed at the _users_ of a repo, while the `.github` folder contains documents and workflows for maintainers and contributors (like a `CONTRIBUTING.md` file, pull request and issue templates etc). With that in mind, moving the release checklist to the `.github` folder for improved discoverability.
